Lettuce Wraps
Completely customizable and ready in minutes– the perfect weeknight dinner! These lettuce wraps are low in FODMAPs, dairy-free and can be made gluten-free by using tamari instead of soy sauce. Who says dinner with dietary restrictions has to be hard?
INGREDIENTS:
1 tablespoon of FODY shallot-infused oil*
1/2 cup of diced carrots
1/2 cup of diced radishes
2 tablespoons of the green top of a scallion
1 pound of ground chicken
1 teaspoon of sesame oil
1 tablespoon of soy sauce or tamari, if avoiding gluten
1 head of butter lettuce
OPTIONAL TOPPINGS:
Cilantro
Red pepper flakes
Sesame seeds
The green tops of scallions
Hot sauce
DIRECTIONS:
Heat the grape seed oil over medium heat in a sauté pan.
Add carrots, radishes and any additional vegetables to the pan, and season with salt and pepper
Sauté for 3-4 minutes or until they begin to soften.
Add ground chicken to pan, and cook through
Drizzle sesame oil and soy sauce or tamari over chicken and vegetable mixture, and stir to combine.
Add mixture to butter lettuce cups, and top as desired.
