Bok Choy Salad
This bok choy salad is such a crowd pleaser! I’ve shared with everyone from my gal pals to my in-laws with rave reviews. Plus, it’s gluten-free and low in FODMAPs making it great for any group with different dietary needs. It’s light, flavorful and goes well with just about anything like your favorite protein or brunch basics!
INGREDIENTS (SERVES 6-8):
1 regular bok choy
1 green onion, green top tops only
2 tablespoons of butter
1/2 cup of sliced almonds
1/4 cup of sesame seeds
1/4 cup of whole flaxseed
DRESSING:
1/4 cup of olive oil
2 tablespoons of sugar
1 tablespoon of champagne vinegar
1 tablespoon of tamari
DIRECTIONS:
Wash the bok choy well and finely chop.
Add sliced green onions to bok choy.
Brown the butter and add almonds, sesame seeds and flaxseed; stir to combine.
Mix dressing ingredients and drizzle over bok choy and green onions.
Toss greens with dressing and top with cooled almond and seed mixture.
