Low FODMAP Valentine's Day Treats

I’m a sucker for Valentine’s Day. I love the flowers and the hearts and the opportunity to spread the love to my family and friends. Plus, any holiday with food fun– I can’t resist.

Don’t let dietary restrictions hold you back from indulging this Valentine’s day. Show yourself some love with three of my favorite gluten-free, mostly dairy-free, low FODMAP treats:

Chocolate Covered Strawberries

Chocolate covered strawberries are hands down the easiest (and arguably the best?) allergen-friendly dessert. I melted Enjoy Life’s dark chocolate chips, swirled my strawberries in the melted chocolate, and placed them on a parchment-lined cookie sheet in the fridge. Voila!

If you aren’t familiar with Enjoy Life, their products are free-from gluten and 14 common allergens: wheat, peanuts, tree nuts, dairy, casein, soy, egg, sesame, sulfites, lupin, mustard, fish, shellfish, and crustaceans. Their baking chocolate has been a pantry staple in my house for a while now.

Meringue

There are A LOT of meringue recipes out there, but after a few tries here’s what worked for me:

  1. Beat 3 egg whites + 1/4 tsp salt + 1/4 tsp cream of tartar until frothy.

  2. Add 1/2 cup of sugar about a tablespoon at a time and a splash of vanilla extract.

  3. Continue to beat until stiff peaks are formed.

From there, I made three different versions:

  • Basic vanilla meringue blob cookies

  • Lemon meringue pie bites with lemon curd

  • Chocolate marbled meringue cookies with melted Enjoy Life dark chocolate chips inspired by Bakers Royale

All baked on a parchment lined baking sheet for 40 minutes at 250 degrees Fahrenheit and cooled on the parchment on a wire rack.

Decorate-It-Yourself Sugar Cookies

I follow FODMAP Everyday’s recipe for rolled sugar cookies with Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour. For basic icing, I combine 1/2 cup of powdered sugar with a splash of lactose-free milk. For Valentine’s day, I also added one smashed raspberry to the icing for color and flavor (you could also use the juice from a couple thawed berries!) then topped with:

  • Strawberry slices shaped like hearts

  • More lemon curd

  • Sprinkles
